As a prep I strongly suggest you contact previous exchange students and ask them their opinion. Furthermore, I suggest looking up the university on forums such as Reddit where locals can voice their opinions. I feel this gives a much clearer overview than purely rankings.
bachelor students are guaranteed a spot in the CityU Dorms. I recommend taking that opportunity. The dorms are quite far away from the city center but a lot cheaper than private dorms. I paid around 1000 EUR for the entire semester. Theres also a lot of exchange students there so many trips taken together start from there anyway.
The university is super easy. It took barely and effort. I highly suggest taking a mandarin class with Prof. Sun. It will be more challenging, but he is a great teacher, and you will learn valuable skills.

HK is a city with a lot to offer. The locals are quite closed off so you will likely spend most your time with other exchange students. There are many great restaurants that are oftentimes cheaper than groceries. Very few people bothered with cooking. The nightlife is okay as well, but the dorms are very far away from LKF where most bars are. Get used to super long travel times as the city itself is very large.
Studying in HK was a great decision. I saw many things and due to its location it was a great starting point for travels into other countries in East or Southeast Asia as well as mainland china
